Roasted Spring Vegetables with Arugula Pesto

There are endless ways to use potatoes, they can serve for almost any meal throughout the day, and can be grilled, roasted, fried, sauteed, and/or baked. I chose this next recipe to highlight potatoes, because I have spring on the mind and it’s a different way to use potatoes that you don’t see very often.
