Parsnip Fries

Parsnips can be prepared many different ways… cooked and mashed, roasted, pureed for soups… but this next recipe I found, would be a very useful one in my family. How about swapping parsnips for potatoes and turning them into fries? Not only is it reducing the amount of carbohydrates, but it increases your fiber by 5 grams per serving.
