Chocolate Matcha Vegan Energy Balls

Holiday baking has begun and all those kitchen smells makes my heart and belly happy. They are a no-bake recipe, easy to make, and I love that they are green for the holidays.

Ingredients

½ cup pitted Medjool dates

½ cup whole raw almonds

¼ cup Chocolate Vegan Shakeology

2 Tbsp. unsweetened matcha powder

1 tsp. pure vanilla extract

1 tsp. pure maple syrup

Instructions

  1. Place dates, almonds, Shakeology, and 1 Tbsp. matcha in food processor. Pulse until well mixed.
  2. Add extract and maple syrup. Pulse until well mixed.
  3. Roll into 14 balls about the size of a Tbsp.
  4. Roll balls in remaining 1 Tbsp. matcha.
  5. Enjoy or store in refrigerator until ready to eat.
