When buying turnips, make sure you look for those that are small and heavy for their size. The younger ones are usually sweeter… as they age they get a little more woodsy tasting. Turnips can be prepared many different ways, roasting seems to be the most popular and brings the best flavor out. Although I do enjoy roasted turnips, I was more in the mood for a soup to keep me warm on these very cold winter days. The following recipe I found is perfect…Turnip Soup is rich and creamy, and a great winter meal. The salad on top is completely optional or can be served on the side.
