Pumpkin Pie Chia Pudding Shakeology

It’s almost that time of year… Pumpkin season is coming!!! What better way to get ready for Fall than to enjoy a pumpkin Shakeology?!?! Pumpkin Pie Chia Pudding is a delicious pumpkin treat that is creamy, full of flavor, and great for you!! This recipe uses Vanilla Shakeology with the added pumpkin puree, but Pumpkin Shakeology could also be used as well.  

Ingredients

2 cups unsweetened almond milk

2 scoops Vanilla Shakeology

1 Tbsp. pure maple syrup

¼ cup pure pumpkin puree

¼ tsp. ground cinnamon

¼ tsp. ground nutmeg

1 dash ground ginger

½ cup chia seeds   

½ cup pecans, unsalted chopped

Instructions               

  1. Place almond milk, Shakeology, maple syrup, pumpkin, cinnamon, nutmeg, and ginger in blender; cover. Blend until smooth.   
  2. Pour almond milk mixture into medium glass bowl. Add chia seeds; mix well.   
  3. Cover bowl; refrigerate for at least 4 hours or overnight, mixing after 2 hours.   
  4. Sprinkle evenly with pecans; serve immediately, or store refrigerated in an airtight container for up to 24 hours.
