Mango-Coconut Overnight French Toast

Mangoes are versatile and can be added into your diet very easily. The following recipe uses mangoes in a breakfast dish that could be a healthy dessert option as well. Mango-Coconut Overnight French Toast is a breakfast casserole with a tropical flair. I prefer fresh mango, but frozen could also be used as well. With very little prep in the A.M., this recipe would be a great option to wake up to on any holiday morning!!
