Health Benefits of Fava Beans

We are nearing the end of May, but the produce list keeps growing!! Next up are fava beans or sometimes referred to as broad beans. Fava beans are green legumes that come in pods and are slightly sweet with an earthy flavor. Fava beans are filled with vitamins, minerals, fiber and protein. “Eating these beans regularly may have benefits for symptoms of Parkinson’s disease, help prevent birth defects, boost immunity, aid weight loss and lower cholesterol levels and blood pressure.” Remember fava beans should be removed from their pod before eating, but they are a very versatile veggie.
