A highly underestimated veggie in my opinion are brussel sprouts. I don’t think it gets as much love as it deserves and honestly the nutritional benefits are outstanding! Basically a small version of the cabbage, brussel sprouts can be prepared in so many different ways. High in fiber, rich in phytonutrients and antioxidant-like compounds, and a great source of vitamin k and c, these are just a few of the reasons why brussel sprouts need to be highlighted as a great addition to any diet.
