Like potatoes, sunchokes can be roasted, fried, boiled, steamed, and grilled. They are pretty versatile and can be added to a variety of dishes. Pureed sunchokes also make a fantastic soup!! Check out the following recipe which is similar to potato hash but it uses sunchokes instead, which are slightly sweeter than a regular potato. Smoky Sunchoke Sausage Pepper Hash is a hearty breakfast meal, but can be served for brunch and dinner, too. Tip: try and choose less-knobby sunchokes for easy peeling, otherwise it can be quite a task!!
