It’s National Spinach Day!!! Spinach is one of those food items that have people liking it or not liking it. Honestly though, spinach is a food that I found to be easily added to dishes without much detection. Spinach has so many health benefits and is a great addition to smoothies, dips, pasta, and even sweet treats like the one below. Spinach muffins are delicious, flavorful, moist, and good for you!! They are easy to make, and you can freeze the leftovers for up to 3 months. Besides the color, no one would even know that spinach is one of the ingredients!!
