Starting this month, May has a lot of great fresh produce items in season. One of my favorites, and can be used in a variety of recipes, is pineapple. Pineapple is a tropical fruit that originated in South America. Pineapples are filled with nutrients, antioxidants and other compounds, such as enzymes that can fight inflammation and help with digestion.
