<p>Chia seeds are native to South America and have been a staple in Mayan and Aztec diets for centuries. Today, they draw the interest of many people for their health benefits and uses in cooking. It turns out the South American staple is a rich source of nutrients and antioxidants.It contains calcium, manganese, and phosphorus, and is a great source of healthy omega-3 fats. As an added benefit, chia seeds can be eaten whole or milled, while flax seeds have to be ground before consumption in order to access their health benefits for example. When buying, both white and black are good, but red are immature and black that are smaller than regular are not good!</p>

<h2>Omega-3 Fatty Acids</h2>
<p>Chia seeds are rich in polyunsaturated fats, especially omega-3 fatty acids. Chia seeds&#8217; lipid profile is composed of 60 percent omega-3s, making them one of the richest plant-based sources of these fatty acids &#8212; specifically, of alpha-linolenic acid, or ALA. The omega-3s in chia seeds can help reduce inflammation, enhance cognitive performance and reduce high cholesterol.</p>

<h2>Fiber</h2>
<p>Fiber is associated with reducing inflammation, lowering cholesterol and regulating bowel function. Chia seeds are an excellent source of fiber, with a whopping 10 grams in only 2 tablespoons. That is one-third of the daily recommended intake of fiber per day.</p>

<h2>Antioxidants</h2>
<p>Chia seeds are rich in antioxidants that help protect the body from free radicals, aging and cancer. The high antioxidant profile also helps them have a long shelf life. They last almost two years without refrigeration.</p>

<h2>Minerals</h2>
<p>Two tablespoons of chia seeds contain 18 percent of the DRI for calcium, 35 percent for phosphorus, 24 percent for magnesium and about 50 percent for manganese. These nutrients help you prevent hypertension and maintain a healthy weight, and are important for energy metabolism and a part of DNA synthesis.</p>

<h2>Satiety</h2>
<p>Satiety is the feeling of being full and satisfied, which helps lower food cravings between meals. The combination of protein, fiber and the gelling action of chia seeds when mixed with liquids all contribute to their satiating effects.</p>

<h2>Gluten-Free</h2>
<p>Chia seeds contain no gluten or grains. Therefore, all of the nutritional benefits of chia seeds can be obtained on a gluten-free diet.</p>

<h2>Egg Replacer</h2>
<p>The outer layer of chia seeds swells when mixed with liquids to form a gel. This can used in place of eggs to lower cholesterol and increase the nutrient content of foods and baked goods. To make the egg replacement, mix 1 tablespoon of chia seeds with 3 tablespoons of water and let sit for 15 minutes.</p>

<h2>Can Be Digested Whole</h2>
<p>Unlike flaxseeds, which are also high in omega-3 fatty acids, fiber and minerals, chia seeds do not need to be ground in order to obtain their nutrient or egg- replacement benefits.</p>

<h2>Dyslipidemia</h2>
<p>A study published in the &#8220;British Journal of Nutrition&#8221; showed that chia seeds as a dietary fat source can lower triglycerides and cholesterol levels while increasing HDL or &#8220;good&#8221; cholesterol. The study also found that when substituting chia seeds for other fat sources, such as corn oil, the ALA was able to prevent high triglyceride levels and reduce central obesity.</p>

<p>Chia seeds can play an important role in regulating insulin levels. They can reduce insulin resistance and decrease abnormally high levels of insulin in the blood.</p>

										<content:encoded><![CDATA[<p>Quinoa is one of my favorites! Many people have never heard of it nor know how to pronounce (I didn&#8217;t either about 2 years ago)! It is pronounced <em>keen-wa. </em></p>
<p><strong>What is quinoa?<a href="http://nikkikubanminton.com/wp-content/uploads/2013/01/images4.jpeg"><img decoding="async" class="aligncenter size-full wp-image-1201" title="images" src="http://nikkikubanminton.com/wp-content/uploads/2013/01/images4.jpeg" alt="" width="259" height="194" /></a></strong><br />
While quinoa is usually considered to be a whole grain, it is actually a seed, but can be prepared like whole grains such as rice or barley. Quinoa is my favorite whole grain for three reasons: First, it takes <strong>less time to cook than other whole grains</strong> – just 10 to 15 minutes. Second, <strong>quinoa tastes great on its own</strong>, unlike other grains such as millet or teff. Add a bit of olive oil, sea salt and lemon juice and &#8211; yum OR vegetable broth! Finally, of all the whole grains, quinoa has the highest protein content, so it&#8217;s perfect for vegetarians and vegans. <strong>Quinoa provides all 9 essential amino acids</strong>, making it a complete protein. Quinoa is a <strong>gluten-free and cholesterol-free</strong> whole grain, is <strong>kosher for Passover</strong>, and is almost always organic.</p>
<p>Culinary ethnologists will be interested to know that quinoa was a staple food for thousands of years in the Andes region of South America as one of just a few crops the ancient Incas cultivated at such high altitude. Who would not want to reap the benefits of this amazing superfood?</p>
<p><strong>1. Quinoa is one of the most protein-rich foods we can eat.</strong> It is a complete protein containing all nine essential amino acids. (already stated above)</p>
<div><strong>2. Quinoa contains almost twice as much fiber as most other grains. </strong>Fiber is most widely known to relieve constipation. It also helps to prevent heart disease by reducing high blood pressure and diabetes. Fiber lowers cholesterol and glucose levels, may lower your risk of developing hemorrhoids and may help you to lose weight as it takes a longer time to chew than does other foods because it makes you feel fuller for longer and is less “energy dense” which means it has fewer calories for the same volume of food.</div>

<div><strong>3. Quinoa contains Iron.</strong> Iron helps keep our red blood cells healthy and is the basis of hemoglobin formation. Iron carries oxygen from one cell to another and supplies oxygen to our muscles to aid in their contraction. Iron also increases brain function because the brain takes in about 20% of our blood oxygen. There are many benefits of iron some more of which include neurotransmitter synthesis, regulation of body temperature, aids enzyme activity and energy metabolism.</div>

<div><strong>4. Quinoa contains lysine. </strong>Lysine is mainly essential for tissue growth and repair.</div>

<div><strong>5. Quinoa is rich in magnesium.</strong> Magnesium helps to relax blood vessels and thereby to alleviate migraines. Magnesium also may reduce Type 2 diabetes by promoting healthy blood sugar control. Other health benefits of magnesium include transmission of nerve impulses, body temperature regulation,detoxification, energy production, and the formation of healthy bones and teeth.</div>

<div><strong>6. Quinoa is high in Riboflavin (B2).</strong> B2 improves energy metabolism within brain and muscle cells and is known to help create proper energy production in cells.</div>

<div><strong>7. Quinoa has a high content of manganese.</strong> Manganese is an antioxidant, which helps to prevent damage of mitochondria during energy production as well as to protect red blood cells and other cells from injury by free radicals.</div>

<strong>A Little More About Sacha Inchi</strong><br />
Though the nuts and oil may be new to many of us here in North America, Sacha Inchi has been cultivated in the Amazon rainforest and along the east slope of the lower Andes for 3,000 years. Archaelogists found evidence of them in carvings on Incan tomb vessels. Plants are said to have a long production time, with some producing year after year for decades. Crops are harvested throughout the year, though costs are lower than those of other oil-producing plants.</p>
<p>The cold-pressed oil is said to contain about 45 percent omega-3 fatty acid, 36 percent omega 6, and 9 percent omega 9, with 27 percent protein. Some experts are calling it the tasty alternative to fish oil supplements.</p>
<p>The oil is used for cooking. It’s said to have a crisp, nutty flavor that’s perfect for salads, meat, fish, poultry, and sprinkled over vegetable dishes. You can use it like olive oil, though it’s said to be lighter, better tasting, and easier for your body to absorb.</p>
<p>Sacha Inchi pulp is a by-product used for soap, flour, bread, and in cosmetics and medicinal creams.</p>

If you know omega-3s, you can guess at the health benefits of these tasty nuts and oil.
